Spinach Masiyal - Grandpa's Favorite

Prep: 5 minutes  Cook: 35 minutes  Serves: 4–6

what you need

1 Spinach Masiyal kit
10 ounces chopped spinach leaves, fresh or frozen
1–2 teaspoons oil
½–1 teaspoon salt to taste
½ teaspoon butter (optional, enhances flavor)

make this easy to prepare dish

  1. Bring 3 cups of water to boil in a 2 quart pan. Reduce heat to low, add ½ teaspoon oil, then add the Spiced Lentil Pack and stir well. Increase heat to medium and cook until lentils are soft, about 20 minutes, stirring every 2–3 minutes. Add water to prevent lentils from sticking to pan.
  2. Meanwhile, bring ½ cup water to boil in a separate pan and cook fresh or frozen spinach for 5 minutes, or cook for 3 minutes in microwave with ½ cup water.
  3. When lentils are soft, add spinach and salt to lentil mixture. Cook on medium-high heat, stirring to ensure it doesn’t stick. Remove from heat when the mixture is thick, and almost no water remains in the pan, 5 minutes.
  4. In a small frypan, heat 1 teaspoon oil (and butter, if used) on medium heat. Add White Lentil Pack and stir. When lentils are golden (2 minutes), remove from heat, add Hot Chili, if desired, and mix. (Make sure chili doesn’t blacken).
  5. Add to spinach/lentil mixture and serve.

Serve with steamed rice for a complete delicious meal! Or, serve as a healthy side to any meal, instead of creamed spinach.
