Sabzi - Mixed Vegetable Medley

Prep: 15 minutes  Cook: 30 minutes  Serves: 4–6

what you need

1 Sabzi kit
Fresh or frozen:
½ cauliflower, cut into 1 inch florets
1 medium green pepper cut into 1 inch squares
1 peeled medium carrot cut into 2 inch fingers
1 cup peas

1 medium onion, finely chopped
2 medium tomatoes or 1 cup canned, pureed
1–2 tablespoons oil
½–1 teaspoon salt to taste
2 tablespoons chopped cilantro (optional)

  1. Heat oil in a large frypan on medium-high. After 1 minute, remove from heat and immediately add 3–4 seeds from Spice Pack #1 and mix. Seeds should crackle (see QR code below for video). If seeds do NOT crackle, heat oil more and repeat. If seeds crackle, add the rest and stir. If seeds turn black, it’s burnt! Redo Step 2 with extra pack.
  2. When crackling subsides, add chopped onion, mix and return to medium heat. Saute for 5 minutes, stirring periodically until soft. Add Spice Pack #2 and mix well. Add Hot Spice as desired.
  3. Add the tomatoes and a ½ cup water. Stir and cook for 4–5 minutes.
  4. Add carrots, peas and ¼ cup water and cover. Allow to cook for 5 minutes on medium low stirring occasionally. Add peppers and cauliflower, and sprinkle ¼–½ cup water. Add salt. Cook for about 10–15 minutes on medium, stirring occasionally, until vegetables are cooked but firm. Add fresh cilantro, if used, and mix well.

Serve with a hot pita, naan, or whole wheat wrap. Or as a side to any meal, instead of mixed vegetables.
